Mushroom Paneer

Ingrediends:

  1. 8-10 mushrooms chopped
  2. ½ cup onion sautéed and ground to a paste
  3. 1 cup boiled green peas
  4. 100 gm paneer lightly sautéed
  5. ½ tbsp ginger paste
  6. ½ tbsp garlic paste
  7. ½ cup tomato puree
  8. 3 tbsp curd
  9. Whole garam masalas (bay leaf, cloves, cinnamon, cardamom, peppercorns)
  10. 3 tbsp milk
  11. ½ tsp turmeric powder
  12. ½ tsp coriander powder
  13. ½ tsp garam masala powder
  14. ½ tsp jeera powder
  15. Red chilli powder and salt as per taste

Method:-

  1. Heat ghee/oil in a pan.
  2. Add whole garam masalas and sauté.
  3. Add onions, ginger- garlic paste and fry to a golden colour.
  4. Add the tomato puree, curds, salt and spices and fry till the oil separates.
  5. Add the mushrooms and peas and fry for 5 minutes.
  6. Add milk , paneer and 2 cups of water and cook till the vegetables are done.
  7. Adjust the consistency as per your liking.
  8. Serve hot with chapatis, rotis or naans.

Grated Cheese Recipe


one of the finest of all cheese recipe which will melt in your mouth served with nan or chapati this recipe is not so hard to prepare an specially loved by kids of tender age, so lets move on to prepare this recipe.....

Ingredients :






  1. Tomatoes Medium Sized : 3 Nos


  2. Onion small (finely chopped) : 1 No


  3. Ginger Garlic Paste : 1 tsp


  4. Coriander Powder : 2 tsp


  5. Turmeric :1/2 tsp


  6. Salt :Acc to taste


  7. Chili Powder : 1 tsp


  8. Garam Masala : 1 tsp


  9. Tamarind water : 1/4 cup


  10. Mustard Seeds : for seasoning


  11. Oil : 1 tbsp


  12. Paneer / tofu (Grated Cheese):350.00 Gms


  13. Coriander leaves fresh : for Garnishing


Dry Roast & grind to Paste:





  1. Sesames Seeds : 1/4 cup


  2. Peanuts : 1/4 cup


  3. Dry Coconut : 1 tbsp


  4. Methi seeds : 1/2 tsp


Method :





  • In a Pan heat the oil & season with mustard seeds.


  • Add onions & fry till brown .


  • Add ginger garlic paste.


  • Cut the tomatoes into medium size pieces and add to Onion mixture along with Tamarind paste/water.


  • Fry for a minute,add all dry masalas & stir to combine.


  • Mix in the Paste , cover & let it cook for some time.


  • Add water if the masala is too thick.


  • Finally add Grated Cheese to the same & Garnish with Fresh Coriander leaves.


  • Using Grated Cheese there is no need to fry & add it at the last moment of cooking time Serve hot over Rice or Roti's.

Palak Paneer



Spinach Cheese Curry is one of the most common recipes of north India made in 90% of the restaurants and very much liked in homes, the preparation is quite simple and the recipe has an energetic content of protein in cheese and iron in spinach, so lets move on to prepare Palak Paneer






Ingredients :



  1. Paneer cubes 15-20 .(About 250 Gms)

  2. Onion chopped 1 No.

  3. Garlic clove Chopped. 2 Nos

  4. Salt To taste

  5. Coriander Powder 1 Tsp.

  6. Cumin Powder 1 Tsp.

  7. Sugar 1/4 Tsp.

  8. Oil 1 Tsp.


For Gravy :


  1. Spinach 1 bunch.

  2. Ginger small Piece 1.

  3. Cinnamon small stick 1.

  4. Green Serrano chillies 2 Nos or to Taste.

  5. Onion small Chopped 1 No.

  6. Tomato 1 NO



For Garnish :

  1. Grated Cheese 1 Tbsp.

  2. Cream 1 Tbsp or To Taste






Method:-


  • Wash & drain the water from Spinach.


  • Chop them coarsely.In a pan bring to boil or microwave on high for 8 minutes all the ingredients for gravy.


  • Cool & grind them coarsely to Paste.In the same pan heat the oil, fry onions till translucent.


  • Add Garlic & fry briefly. mix all the spice powders & stir.


  • Add the Spinach Paste & let cook for a couple of minutes till combined.


  • Add the Paneer cubes cook for 2 minutes & switch off the flame.


  • Adjust the seasonings & Serve Garnished with Cream & Grated Cheese on top.

Paneer Makhani






Butter cheese Curry is one of the most loved curries not only in India but in countries like Australia, new york, London and many more. Recipe is simple and taste is mouthwatering so lets quickly move on to make the recipe....









Ingredients:







  1. 250 gms Paneer



  2. 200 gms Fresh Cream



  3. 200 gms Tomato Puree



  4. 2-3 tblsp Butter



  5. 2 tblsp Fenugreek leaves



  6. 1/2 tsp Red chilli powder



  7. 1/2 tsp Garam masala powder



  8. 2-3 Green Chillies



  9. Salt as per taste



Process:







  • Melt the butter in a pan, add slit green chillies, tomato puree, kasuri methi, salt, red chilli powder and simmer for 4-5 minutes.



  • Add the cream and garam masala powder and cook further for 2-3 minutes.



  • Add the paneer pieces and cook for a minute.



  • Serve hot garnished with coriander.

Matar Paneer









Pea cheese curry is the one of the most common curries of India in winter when the shops are filled with sweet green peas this recipe becomes the most common, one can find this recipe in restaurants and motels so jot down the ingredients...









Ingredients:









  1. 450gms shelled Mutter (green peas)




  2. 250gms Paneer




  3. 2 medium onions (chopped)




  4. 6 cloves garlic (crushed)




  5. 1 tbsp grated ginger




  6. 2 green chilies (chopped)




  7. 250gms tomatoes (peeled and sliced)




  8. Salt To Taste




  9. 1cup curd / plain yogurt




  10. 1 tsp turmeric powder




  11. 1 tbsp coriander seeds




  12. 4 bay leaves




  13. 2 cups water




  14. 1/2 cup ghee / vegetable oil




To Garnish :









  1. Garam masala powder




  2. Chopped coriander leaves




Preparation:









  • Make a paste by grinding together half the onions, the garlic and coriander seeds.




  • Heat the ghee in a frying pan and cut the paneer into 2.5-cm/1-inch cubes.




  • Fry the paneer to a light brown and remove to drain on a plate.




  • Add the remaining onion and the ginger to the ghee / oil in a pan and add the bay leaves and fry until the onion is golden brown.




  • Add the turmeric and the paste mixture and fry until the ghee starts to separate.




  • Add the paneer and mutter (peas) along with the yogurt, chili, tomato and salt. Stir for 5-6 minutes over low heat.




  • Pour in the water and simmer gently for 20 minutes.




  • Serve the matar paneer sprinkled with garam masala and coriander.

Shahi Paneer






Royal cheese curry or shahi paneer is the most loved curry in India and commonly found in 90% of the marriage dinners in India, so loved by all we should now gear up for some lovely looking shahi paneer which can be served along with chapati, nan or roti









Ingredients:







  1. 200 gms Paneer



  2. 2 Medium Onions



  3. 1" Ginger



  4. 3-4 Garlic Pieces



  5. 2 Green chillies



  6. 1/2 tsp White Pepper Powder



  7. 1 tsp Red Chilli Powder



  8. 3/4 tsp Turmeric Powder



  9. 1 tsp Garam Masala Powder



  10. 3-4 tbsp Cream



  11. 1/4 cup Dry fruits (Cashew Nuts, Raisins, Makhane)



  12. 1/2 cup Milk



  13. 8-10 tbsp Vegetable oil



  14. Salt to taste



Preparation:







  • Heat oil in a kadhai.



  • Cut paneer into small cubes. Fry over medium heat until light brown.



  • Keep the paneer pieces aside.



  • Saute the dry fruits in one tablespoon of oil.



  • Grind onion, ginger, garlic, green chilli in a blender and make a fine paste.



  • Fry the mixture in the remaining oil until golden brown and oil starts separating.



  • Add salt, red chilli powder, white pepper, turmeric powder, garam masala. Saute for 1-2 minutes.



  • Add milk to make the gravy. Bring the gravy to boil. Reduce the heat and cook until the gravy becomes thick.



  • Put a portion of the dry fruits in the gravy while it is being cooked. Keep the rest of dry fruits for decorating.



  • Finally add paneer cubes and 1 tbsp cream. Heat for 5 minutes.



  • Garnish shahi paneer with cream and dry fruits and coriander leaves.

Paneer Tikka






Hot and best, for those who just want to eat spicy roasted cheese along with hot vegetables, the recipe is a very simple and can be served along with nan or chapati or can be taken as a snack as seen in indian dinner parties, so lets move on to make Cheese tikka







Ingredients:







  1. 1 Large block of Paneer



  2. 1 onion



  3. 1 Capsicum



  4. 1 Tomato



  5. Few Mushrooms



  6. Finely chopped Coriander leaves



To Marinade:







  1. 1/2 cup Curd (plain yogurt)



  2. 1 tsp Garlic paste



  3. 1 tsp Ginger Paste



  4. 2 tsp Tandoori powder



  5. 1 tsp cumin (jeera) powder



  6. 2 tsp Chaat powder



  7. Salt to taste



  8. Red chili Powder to taste



Process:







  • Cut Paneer into long 1/2" thick cubes.



  • Cut all vegetables into cubes.



  • Mix all ingredients for marinade and keep aside.



  • Add the left marinade to the vegetables.



  • Brush the marinade to the paneer and refrigerate it for 3 hours.



  • Heat oil in a kadhai and fry marinated paneer till fully done.



  • Also fry other vegetables.



  • In a plate arrange fried vegetables and then paneer.



  • Garnish with coriander and lemon slices



  • Serve tandoori paneer tikka hot with hari chutney.

Chilli Paneer

If the desire is to have something spicy then chilli cheese or chilli paneer is the just right recipe for you, one of the best looking and taste is good to can be served along with chapati and rice this recipe requires an expert hand to finish for as we do in our restaurants, so lets Begin ....





Ingredients:


  1. 350 gms Paneer



  2. 2 tsp Salt



  3. 1 Egg



  4. 1/2 cup Corn Flour



  5. 1 tsp Ginger-Garlic Paste



  6. 2 cups Coarsely Chopped Onions



  7. 2 tbsp Sliced Green Chillies



  8. 1 tbsp Soya Sauce



  9. 2 tbsp Vinegar



  10. 1/4 tsp Ajinomoto Oil for frying



  11. Little Water




Process:

  • Cut the paner into cubes.



  • Mix together the cottage cheese, 1 tsp salt, egg, corn flour, garlic, ginger and water to just coat the paneer pieces with the mixture.



  • Heat oil in a pan and fry the paneer pieces caoted with mixture till golden in color.



  • Heat 2 tbsp of the oil in a wok and stir fry the onions in it over high heat for half a minute.



  • Add the green chillies, salt, soya sauce, vinegar, ajinomoto and the fried paneer cubes.



  • Mix well, and garnish the chilli paneer with finely cut spring onions and coriander.

Kadai Paneer



One of the best modern day dishes where cheese is cooked with capsicum, the taste of the dish is slighter sweeter and looks dark brownish in colour and really good and mouthwatering in taste, recipe should be served hot along with chapati / nan / roti






Ingredients:






  1. 250 gms Cottage Cheese
  2. 3 Capsicum
  3. 4 Onion
  4. 4 Tomato
  5. 1 " long piece Ginger
  6. 1 tsp Red Chili Powder
  7. 2 Bay Leaf
  8. 4 Cloves
  9. 1 piece Cinnamon
  10. Little Orange Color
  11. 4 tblsp Clarified Butter or Oil




Process:



  • Cut cottage cheese, capsicum in long pieces.

  • Grind onion, tomato, ginger, salt, red chili powder and orange color.

  • Mince cloves and cinnamom.

  • Heat clarified butter in a pan.

  • Add bay leaf, cloves, cinnamon.

  • Then add onion, tomato, ginger paste.

  • Continue cooking it on medium flame till ghee/oil begins to separate.

  • Add paneer and capsicum pieces.

  • Cook on low flame.

  • When the capsicum are done put off the flame.

  • Take off the fire and serve hot.

  • Serve with nan or paranthas..
